Thank you, Nancy! In my opinion, Saffron is a bit of a sleeper in the U.S. and quite the culinary king in areas in the Middle East-Asia-India. It is time for Saffron to be known in the U.S.- where health and well-being needs a lot of help from the plants!
Really interesting and informative essay, Robin. I have tried saffron 2 times before and it was on rice as Persian restaurants here in Ottawa. So many potential health benefits and now I understand why the cost is high because of the labour involved in processing saffron. Thanks for sharing.

Wow, lucky you, that's marvelous and what a great friend, Amy, thank you for sharing! When I was traveling in Morocco, I was given several grams of saffron threads and really enjoyed the nutrition and the deliciousness of such a regal plant.
May we increase the fields, farms, forests and waters so much that they envelope and embrace and restore all the careless, mindless and misguided things that human egos do to destroy them.
